This is the first dinner that my hubby made for me after we were married!
Ingredients:
4 chicken breasts
4 Tablespoons corn oil
8 shallots, sliced
rind, and juice of 1 lemon
2 teaspoons worchestershire sauce
4 Tablespoons chicken stock
1 Tablespoon chopped fresh parsley
Directions: Place the chicken on a chopping board. Sover them with plastic wrap, and pound them with a wodden mallet, or rolling pin until flattened. Heat the oil in a skillet, and fry the chicken for three minutes on each side. Add the shallots and cook for three minutes longer. Sprinkle with the lemon juice and rind, worchestershire sauce, and chicken stock. Cook two minutes. Sprinkle with chopped fresh parsley, and cook until chicken is no longer pink.
