My aunt Brenda tells me that this is one of her family's favorites!
Ingredients:
12 corn tortillas (I usually double this)
1 pound lean ground beef
1 onion, chopped (I don't always add this because my girls throw a fit.)
1 (8 oz.) can tomato sauce
1 (10 oz) can enchilada sauce
1 (16 oz.) pkg. shredded cheddar cheese, divided
lettuce
tomatoes
sour cream
Directions: Preheat oven to 350 degrees. Tear corn tortillas into pieces and set aside. Brown meat in a large skillet, and drain. Cook onion until it is translucent. Remove from heat, and stir in tomato sauce, enchilada sauce, half the cheese, and tortilla pieces. Pour into a greased casserole dish. Bake 20-3- minutes. Sprinkle remaining cheese on top. Return to oven for 5 minutes. Garnish with lettuce, tomatoes, and sour cream.
