Ingredients:
1 1/2 pounds chicken cutlets
1 (8 oz.) package medium pasta shells
1 pint cherry tomatoes, cut in half
(4 oz.) fresh mozzarella, cubed
1/2 Cup parsley, chopped
1/4 Cup grated parmesan cheese
2 Tablespoons butter
coarse salt, and fresh ground pepper
Directions: Boil a large pot of water for pasta shells. Meanwhile, season chicken with salt and pepper, and cook on a grill, or in a grill pan until nolonger pink. Cut chicken into small strips. Cook pasta shells in boiling water. Reserve about 1 Cup of pasta water, then drain shells, and return them to the pot. Add chicken, tomatoes, mozzarella, parmesan, parsley, and butter to the pot. Stir. Slowly add some of the pasta water until a coating of sauce is on all of the pasta. You probably won't need all of the water. Sprinkle each serving with a little more parmesan cheese. ENJOY!
